Of the all dishes we had we enjoyed the panuchos yucateros the most. Great combo of refined beans and shredded pork. Excellent guacamole although perhaps a tad too salty. Cocktails were super too. Food was served at intervals which meant we could savour each dish before the next arrived. Service great. The restaurant was full but not noisy.

This franchise in CDMX has replicated it's successful style in Madrid with grace. The place itself is super well decorated, we always love the Mexican hospitality flavor brought to Madrid, and the quality of the service makes you feel like you are visiting a small part of México Our favs were tacos de langostino and panuchos with cochinita, but the rest of the menu was in a very upper side position Fair price vs quality relationship, considering the neighborhood Well done team Bajío

The food in El Baijo is authentic Mexican fare, and is executed exceptionally! We had the prawn tacos, the rabo de toro tacos, the Torreznos, and the beef carnitas!!! Superb food and even better service by our server Travis!!! Salud to El Baijo!

The pork quesadilla was good, featuring proper cheese melt and seasoned pork, but proved quite expensive for just one piece, raising immediate concerns about portion-to-price ratios. The oxtail tacos were excellent - succulent and perfect with tender, slow-braised meat that demonstrated masterful preparation of this premium cut. The rich, deep flavors showcased why oxtail commands higher prices when executed properly, making these tacos the clear highlight of the meal. The carnitas 250g serving was delicious and appropriately portioned for 2-3 people, offering the authentic slow-cooked pork texture and flavor that defines quality carnitas. This dish provided better value through generous serving size and exceptional taste. The tres leches cake was amazing, featuring fresh strawberries and a lovely cinnamon taste that elevated this classic Mexican dessert beyond standard preparations. The perfect moisture balance and creative flavor additions made it a memorable finale to the meal. However, the restaurant's pricing at 40 euros per person is too damn expensive and almost unjustifiable given the portion sizes and local market context. While the food quality justifies premium pricing to some extent, the cost-to-value ratio makes El Bajio a difficult recommendation for regular dining.

What a wonderful spot for an authentic, high-end Mexican dining experience in Madrid. Having lived in Mexico for over a year, I was thrilled to find a place that captures the essence of real Mexican cuisine so well. I visited with a group of coworkers, and everyone was impressed. The food was exceptional, the service attentive and professional, and the atmosphere beautifully designed. The décor, featuring Aztec sun motifs and clean, modern colors, added a thoughtful cultural touch - exactly what you'd hope for in a fine dining setting. As for vegan options, the selection was a bit limited. That said, the sope de mole starter was delicious, and the chocolate dessert had a rich, intense flavor, though the texture was slightly too soft for my preference. The main salad was flavorful but not particularly filling. I’d love to see a heartier vegan main dish added to the menu in the future. Overall, this restaurant is definitely worth a visit - whether for a romantic evening out or a special dinner with coworkers, family, or friends.

I am Mexican living in Madrid so I always search for a good Mexican product. It is difficult to preserve the quality and the full flavors of Mexican gastronomy. And this place has successfully made it. Here I can find things that I cannot find in any place else like the “Empanada de plátano “ typical of the south of mexico, Fideo seco that is amazing of course I should mention the tacos and as a main course the Rape a la Veracruzana is a must so as the Mole de olla which is also very typical don’t forge to ask as a dessert for cafe de olla and pastel de elote . Congratulations to this amazing place in their first month and hopefully we go again very very soon

As a Mexican living in London, visiting Madrid, I have to say this is the best place to eat! I’ve been missing Mexican food and it tasted just like my grandma’s food! The portions were the perfect size: the service was amazing, very attentive and catering to each of our needs and wants. I understand people saying that it does not taste like what they expected, but please remember that what most of you know as Mexican food is actually Tex-Mex which does not resemble authentic Mexican food at all. The food was delicious, we had the mole, the guacamole with chicharrón and several of the “tacos” it was amazing and really tasty. I would definitely recommend it and he open to experience what actually Mexican food tastes like.

Excellent Mexican food, with top notch service. We got some small tacos as starters, a half salsa verde/half mole enchiladas which were perfectly balanced, and the dorada with pepian sauce, which was wonderful. We finished with a corn cake which was accompanied by a rum sauce. Great experience! We will be back.
